Do vegans have more fun? I've always wanted to know the answer to that question. I’m beginning to be more conscience of what I’m eating and I’m taking my health more seriously. I've started my healthy journey August 2020. I decided to make a conscious decision to eat better get more exercise, get the proper rest and set aside time for myself for pampering and self care. I have a three year old and I want to live my life to the fullest, have plenty of energy, look and feel good and be able to function mentally and socially. Research has shown that a vegan diet can protect you against heart disease, obesity, diabetes, and hypertension. (www.nuts.com)

  • 1/2 top. grated lemon zest

    Dressing

  • 1/4 Olive Oil

  • 1 tsp. grated lemon zest plus 1/3 cup lemon juice

  • 1/4 c. tahini

  • 1 tbsp nutritional yeast

  • 1 tbsp Dijon mustard

    Salad

  • 4 thick slices of bread

  • 3 tbsp. olive oil

  • 2 small red onions

  • salt and pepper

  • 2 bunches small radishes

  • 1 clove garlic cut in half

  • 2 heads of gem lettuce or romaine hearts leaves separated
